Step 1 -- Prepare premium water;
Prepare premium water to brew a tasteful tea. The purified water from local water store or premium natural mineral water is recommended. |

Step 2 -- Heat water to 180°F ~200°F;
Heat up the premium water by using an electric kettle, and set the temperature between 180~200°F. |

Step 3 -- Rinse tea pot;
Use heated water to rinse and preheat the tea pot then pour out the water. |

Step 4 -- Place tea leaves;
Place 1 to 2 teaspoon loose tea into the teapot (about 10 grams) or 1 scoop if using the special tea scoop. |

Step 5 -- Rinse tea leaves;
Pour the heated water into teapot then swirl the tea pot 2~3 times in a horizontal circular motion and pour out the water into tea pitcher immediately. This process cleans the leaf shreds and readies the leaves as opened state. |

Step 6 -- Thermally moisturizing the cups;
Applying the remaining rinsing water to all tea cups to preheat the cups and also enhance the thickness of the aroma. |

Step 7 -- Brew the first tea;
Fill the tea pot to the top with hot water and cover the lid, allow the tea leaves to steep for 40 to 60 seconds. Put tea strainer on the tea pitcher and pour all the brewed tea into it.
We use the tea pitcher for two purposes; to filter out the leave shreds and to maintain the temperature of the brewed tea.
Take out the strainer and pour the tea into the cups. Now the tea is ready to drink. |

Step 8 -- The following preparation;
Apply heated water into the teapot again and with the increment of few seconds of steeping time as the repeated usage of the same tea leaves increases, as to maintain the stability of the aroma and taste.

Note: The same amount of loose tea can be prepared up to
8 times and the tea can still maintain its freshness within
2 hours timeframe (even in room temperature).
Please dispose the tea leave after the steeping process, fermentation occurs when leaves are wet and enclosed in a sealed container. Thought it will not cause any serious health problem, it is best if leaves are disposed within 4 hours after use. |
